“Cream” of Cauliflower & Sun Choke Soup with White Truffle Oil
Heart-Shaped Roasted Beet Juice

Jewels Berry Tart of Hearts
- Butter flavor nonstick cooking spray
- 3 Tablespoons sugar, divided
- 1/2 teaspoon cornstarch
- pinch five spice
- 1 tablespoon Grand Marnier
- 3 tablespoons water
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 teaspoon orange zest
- 1/4 teaspoon cinnamon
- 3 sheets filo dough, defrosted
1). Preheat oven to 350 degrees F. Coat 2 ramekins with cooking spray.
2). Stir together 1 1/2 tablespoon of the sugar, cornstarch, five spice, Grand Marnier, and water in a small saucepan over medium heat. Add 1/4 cup blueberries, 1/4 cup raspberries, and orange zest. Stir well. Cook until mixture is bubbly and thickened. Remove from heat and stir in the rest of the berries. Set aside.
3). Mix remaining sugar and cinnamon in a small bowl.
4). Cut filo lengthwise and crosswise to form 4 rectangles. One filo sheet at a time, keeping a damp towel over remaining sheets and working quickly so they do not dry out, place in ramekin, lightly coat with cooking spray and dust with cinnamon sugar. Repeat until all the filo layers are in the ramekins.
5). Bake in preheated oven for 8 minutes, or until golden brown. Cool, and right before serving spoon filling into both filo tarts and serve.
Serving Suggestions:Serve with low fat vanilla bean yogurt, low fat vanilla bean ice cream, or fat free whipped cream topping.
